Cuban Grilled Chicken with Salsa Fresca

Cuban Grilled Chicken with Salsa Fresca

Ingredients

  • Cuban Chicken:
  • 2 tbsp olive oil
  • 2 tsp Garlic Powder
  • 2 tsp Cumin
  • 2 tsp Paprika
  • 1 tsp Chilli Flakes
  • 4 skinless chicken breast halves
  • Salsa Fresca:
  • 1 cup grapefruit segments
  • 1/2 cup cubed Yam Bean (found in Asian supermarkets)
  • 3 tbsp chopped red onion
  • 2 tbsp grapefruit juice
  • 2 tbsp olive oil
  • 1 tbsp chopped fresh coriander
  • 1 tbsp chopped fresh jalapeño pepper

Method

  1. For the chicken, mix juice, oil, garlic powder, cumin, smoked paprika and chilli in small bowl until well blended. Place chicken in large re-sealable plastic bag. Add marinade and coat well. Refrigerate 30 minutes or longer for extra flavor.
  2. Meanwhile, for the salsa, mix all ingredients in medium bowl. Cover. Refrigerate until ready to serve. Remove chicken from marinade and discard any remaining marinade.
  3. Grill chicken over medium-high heat 6 to 8 minutes per side or until cooked through. Serve chicken with Salsa Fresca.
