Ingredients
  • 1 medium baking potato
  • 3 tbsp (80g) butter, softened
  • 3/4 cup flour, extra for rolling
  • 1 tsp baking powder
  • 1/4 tsp McCormick Organic Ground Paprika
  • sea salt
  • 1 egg, lightly beaten
  • 1/4 cup grated manchego (or Parmesan) cheese
  • 2 tbsp (40mL) milk
Directions
  1. Pierce potato with a fork several times, this allows excess steam to escape while cooking. Microwave on HIGH 8 minutes, turning potato over halfway through cooking. Let stand until cool enough to handle, then remove skin from potato.
  2. Place potato and butter in medium bowl. Add flour, baking powder, McCormick Organic Paprika and sea salt; stir to blend. Add egg, cheese and milk using a wooden spoon bring together until a smooth dough forms. Divide dough in half. Roll each piece of dough on a lightly floured surface into an oblong shape, about ½ cm thick.
  3. Heat plancha (flat cast-iron griddle) on grill over medium heat. Brush plancha lightly with oil or spray with cooking spray. Brush off any excess flour from dough pieces and carefully place onto plancha. Cook for 3 to 4 minutes each side or until lightly charred and cooked through. (Depending on the size of your plancha, you may need to cook dough pieces in batches).
