  1. For homemade chorizo - Place pork mince in a medium, non-metallic bowl. Add all remaining ingredients and use your hands to massage mixture well, cover and refrigerate until ready to cook.
  2. To cook, heat a little oil in medium frying pan over medium heat. Break up chorizo into bite sized pieces and add to the hot pan. Allow to cook for 3 -5 minutes, without stirring, allow mince to brown before tossing and repeating.
  3. For chilli beans- Heat 2 teaspoons oil in a medium sauce pan over medium heat. Add onion and cook stirring occasionally until softened. Stir in chilli flakes, beans and tomato.
  4. Bring to the boil then reduce heat and simmer uncovered for 10 minutes or until sauce thickens slightly.
  5. When ready to serve- In a large non-stick frying pan heat the remaining 2 tsp oil over medium heat. Break 3 eggs into pan and sprinkle half of the salt and cumin over the eggs, reduce heat to low. Cook eggs until the whites are set, remove from pan and keep warm. Repeat with the remaining eggs, cumin and salt.
  6. Serve warm tortillas topped with chilli beans and or chorizo, an egg, pickled onion and other optional toppings.
