Season the chops with salt and pepper. Lightly spray with oil a deep-sided frying pan (with lid). Place over MEDIUM – HIGH heat and cook chops, browning both sides. Transfer chops to a plate, cover and set aside.
Add oil to the pan followed by the vegetables and sauté, browning well, for 2-3 minutes. Pour Keen's meal base over vegetables, add stock and stir through. Reduce heat to a simmer, COVER and cook for 10 minutes.
Nestle chops in-between vegetables and sauce. Cover and cook for a further 10-15 minutes or until pork and vegetables are cooked through.
Serve honey mustard chops and vegetables with a sprinkle of parsley and extra sauce spooned over.
