Spray a large non-stick frying pan with oil and heat over MEDIUM-HIGH. Add chicken and brown well for 4-6 minutes, add onion, carrot and capsicum and sauté for 2-3 minutes stirring often.
Reduce heat to a simmer add Keen's meal base, peanut butter, water, lemon juice, soy sauce and sugar. Stir to combine then cook, stirring occasionally, for 5 minutes or until chicken is cooked and sauce is heated through.
Serve over cooked rice with fresh coriander leaves.
